Our zinfandel grapes were organically grown. They were stemmed and crushed and inoculated with Premier Cuvee yeast and Leuconostoc oenos malolactic culture. Distilled water was added to reduce the sugar slightly to 23.6 brix. Fermentation was complete after nine days and the grapes were left on the lees for an addition five days. The wine was aged in new Lafitte export oak for 6 months and racked three times, but no fining agents were added. Total yield was 67 gallons.
